Air-Fried Chicken Leg with Spicy Garlic Yakisoba

Ingredients:

Chicken Leg:

  • 1 bone-in, skin-on chicken leg

  • 1 tbsp garlic-ginger paste

  • 1 tsp cumin powder

  • 1 tsp coriander powder

  • ½ tsp turmeric powder

  • ½ tsp chili flakes (adjust to spice preference)

  • 1 tbsp white vinegar

  • Salt to taste

Yakisoba Noodles:

  • soba noodles

  • ½ white onion, sliced

  • 1 bell pepper, sliced (any color)

  • 1 handful enoki mushrooms (or mushrooms of choice)

  • + Any veggies of choice

For the Sauce:

  • 1 tbsp garlic chili paste

  • 1 tsp roasted garlic (optional but recommended)

  • 1 tbsp dark soy sauce

  • 1 tbsp light soy sauce

  • 1 tbsp oyster sauce

    Instructions:

    Step 1: Marinate the Chicken

    In a bowl, mix garlic-ginger paste, cumin, coriander, turmeric, chili flakes, white vinegar, and salt. Coat the chicken legs evenly and let them marinate for at least 30 minutes (or overnight for deeper flavor).

    Step 2: Air-Fry the Chicken

    Preheat your air fryer to 190°C (360°F). Place the marinated chicken legs skin-side down and air-fry for 13 minutes. Flip and cook for another 13 minutes, or until golden brown and cooked through.

    Step 3: Cook the Noodles

    Boil the soba noodles according to package instructions, then drain and set aside.

    Step 4: Stir-fry the Vegetables

    Heat a pan or wok over medium-high heat. Add a bit of oil and stir-fry the onion, bell pepper, and mushrooms until caramelised.

    Step 5: Make the Sauce & Combine

    Lower the heat and add garlic chili paste, roasted garlic, dark soy sauce, light soy sauce, and oyster sauce. Stir well. Add the cooked noodles and toss everything together until evenly coated.

    Step 6: Serve & Enjoy

    Plate the yakisoba and place the crispy air-fried chicken leg on the side. Alternatively, you can chop the chicken and mix it into the noodles.
